Meet Edier and Fabian Vargas, producers of some exceptional coffee. Theirs was one of our favourite coffees last year and we're excited to release this beautiful Colombian lot for a second season!
Sourced from Oporapa, Huila, this light-medium roast has flavours of raspberry jam, apricot and cola, achieved using an EF Washed process.
Edier and Fabian bought a 1-hectare plot in 2017 when they saw the opportunity to grow quality coffee at a very high elevation. They now grow coffee where, a few decades prior, it would have been completely impossible to do so. Frosts happen frequently, which is still the main risk for their crop as it can stop the growth cycle of the fruit and create devastating production losses. The last frost was in June/July 2023, which led the team to lose more than half of the production.
The brothers now have their plant nursery, where they're growing various rare coffee varieties. They also plan to build their own wet mill and drying facilities soon.
Despite the high quality of their coffee, they face significant challenges in processing and drying their beans, since they currently have no processing facilities of their own.
Edier and Fabian have relied on their friends in the community to assist with the essential steps of pulping, fermenting, and drying beans. However, as their harvest has increased—particularly this year due to favourable weather conditions—their friends' capacity has been strained. This issue is particularly acute during peak harvest season when the volume of beans to be processed surges. This has led to delays, quality concerns, and logistical headaches.
To address this issue and ensure the quality and timely processing of their coffee, the brothers are looking to build their own drying facility. This facility will provide them with greater control over the entire process—from initial cleaning to final drying—improving the quality of their coffee, increasing their overall yield, and securing a more stable income.
